It’s Almost Nocino Time – 2016
Some time in the next week or so, I should be receiving my annual 5lb box of green walnuts from the nice folks at Haag Farms. I’ve been giving some thought to what I want to manipulate this year. Last year, I made batches using grappa, brandy, and red wine as steeping agents for the green walnuts. The results were quite interesting. All three had unique taste characteristics with the red wine batch being the most unique (Duh!).
I will likely make batches using brandy and red wine again. However, I have decided to use dark brown sugar for my initial sweetening agent. The molasses in the brown sugar should provide an interesting counter to the flavor of the green walnuts.
So, brown sugar is the ingredient this year! Can’t wait to taste it!
